An old-school recipe for some simple crumbly biscuits.

Melting Moments (Biscuits)

A simple biscuit which depending on how deep you make them can retain a bit of softness in the middle

  • 6 oz Unsalted butter (My original recipe involved margarine and lard. So I use neither.)
  • 6 oz Sugar
  • 10 oz Self Raising Flour
  • 2 oz Porridge oats (Either for rolling the biscuits in, or actually I just add to the flour)
  • 1 egg
  • 2 oz Glace Cherries to decorate (not essential, these only go on if I remember to buy them. Which I've not done so in about 20 years)
  • some vanilla escence ((not required, I add all sorts of spices and flavours to my biscuits))
  1. Cream butter and sugar until light and fluffy
  2. Break in egg and mix well
  3. Add vanilla escence
  4. Gradually add in flour. In recent times I’ve added the porridge oats to the flour along with any other spices and dry flavourings I’ve fancied (e.g. cinnamon, mixed spice, ginger) and added this to the butter/egg mixture
  5. Roll the mix into walnut sized balls. The above amounts make about 30
  6. Depending on whether you decided to add the oats to the flour or not, if you want them on the outside of the biscuit, roll the balls of mixture in the oats.
  7. Place the mixture balls on a lined baking tray and if required, decorate with the cherries
  8. Bake in the oven for about 15 minutes at gas 5 / 350F
  9. Leave to cool and harden off whilst on the tray before moving to a tin to keep them fresh (once cold)
